VEGAN CHOCOLATE MOUSSE

INGREDIENTS:

  • 1/2 Kilo de Tofu Drained.
  • 1/4 Cup of Cream or Soy Milk.
  • 1/2 cup Peanut Butter.
  • 1/2 Cup of Chocolate without milk or sugar.
  • 1/3 Cup of Coconut Oil.
  • 1/4 Teaspoon of Salt.
  • 1/3 Cup of Agave Syrup or honey.
  • 1/2 Teaspoon Cinnamon Powder.

PREPARATION:

  • To start melting the chocolate with the coconut oil using the microwave, until it melts completely.
  • Add the tofu, peanut butter, agave syrup, cream or soy milk, salt and cinnamon in a blender and mix at high speed.
  • Blend the mixture until it has a very creamy texture. Then, using the blender in the lowest speed position, mix the chocolate and melted coconut with the previous mix until a smooth texture is obtained.
  • Pour the mousse into serving glasses and chill in the refrigerator until very cold.
    Ready!! You already have a delicious mousse, ready to share or enjoy alone.

NOTE:

If you can not consume soy milk or you can not get it, you can substitute it with almond milk, coconut milk, oatmeal or whatever you have available. Peanut butter can be made by processing a cup of peanuts without salt until you get a paste, I’ll soon pass the recipe.

GRANOLA BARS WITHOUT OVEN

Hello!! Friends today I bring you another option to prepare your own Granola Bars, this time I made them with raisins, cinnamon and walnut, and the best part is that you can prepare them without an oven. Granola

INGREDIENTS:

  • 1 and 1/2 cup of oatmeal (I toasted it a little in the pan for 5 minutes)
  • 1 cup of dates without bone.
  • 1 spoon of vanilla.
  • Cinnamon powder and nutmeg.
  • 1/4 cup raisins.
  • 1/4 cup chopped walnut.

PREPARATION:

  • Form a date paste into a food processor with the dates and the vanilla spoonful, add a little water if necessary.
  • Mix the other ingredients well with the date paste (moisten your hands to mix everything without sticking to your fingers)
  • Empty the mixture into a mold with waxed paper and press well with your hands.
  • Take it to the freezer for 20 minutes.
  • After 20 minutes, remove the mixture from the mold and cut the bars to the size you prefer with a wet knife.
  • Ready!! You already have a delicious Granola Bars easy and quick to make.

ORANGE BREAD

Hello!! Friends today I bring you a delicious recipe, it is an Orange Bread, low in calories and rich in flavor. I hope you like the recipe, if so, share it and give me a like 🙂 Good Appetite !!

Ingredients:

  • 7 Cups of Almond Flour or Traditional.
  • 2 Cups of Orange Juice.
  • 2 Cups of Raisins (Optional).
  • 1/4 cup of Panela Honey (Sweeten to taste).
  • 2 Yeast Envelopes.
  • 1 Tablespoon Orange Peel Grated.
  • 2 Teaspoons of Salt.
  • 2 Tablespoons of Vegetable Oil.

Preparation:

  • In a saucepan, add the raisins, panela honey, orange peel rind and orange juice.
    Mix the mentioned ingredients, hot so that the fruit softens and stir well. Be alert and do not let it boil.
  • Then add the mixture in a large container and mix again, adding to the mixture the two tablespoons of vegetable oil. Let it cool a bit. Once the mixture is lukewarm, dissolve the yeast.
  • Now go adding the flour gradually; the idea is to add flour little by little and go kneading, until completing the seven cups.
  • Knead very well, It can be a little tedious to get a perfect dough, but to make it a little simpler, fill the surface where you are going to knead with flour and also your hands.
  • Every time you see that the dough is sticking, add a little more flour, until the dough stops sticking in your hands or in the counter where you knead.
  • On the other hand, place the dough in a container for breads, oil the container before emptying the dough and let it rise until it doubles its size from 30 to 40 minutes.
  • Bake for 40 minutes at 350ºC. Once ready, let cool to room temperature and once cold it can serve. Ready!!

If you do not want to make bread in a single large container, you can make buns and bake them in individual containers. If you want a less large bread, reduce the amounts of the ingredients in half.

FLAN VEGAN

Hello!! Friends today I bring you a Vegan Flan, delicious and healthy. No eggs or dairy products, it is just as tasty as traditional custards. I hope you like the recipe, if so, give me a like and tell me what recipe you would like to see in the blog 🙂 Good appetite!!

Ingredients:

  • 1/2 Liter of Soya Milk.
  • 4 Tablespoons of Chickpea Flour.
  • 4 Teaspoons of Corn Starch.
  • 1 Teaspoon of Agar Agar (Vegetable Jello)
  • 1 1/4 Cup of Sugar.
  • 2 Tablespoons of Vegetable Margarine.
  • Water.
  • Vanilla.
  • Lemon peel.
  • Cinnamon powder.

Preparation:

  • Place in a bowl 1/4 cup of sugar with the corn starch, stir well.
  • On the other hand, we combine the chickpea flour in half a cup of water, mix well and add to the cornstarch with the sugar.
  • Mix everything evenly until you get a very thick mixture that will make a little foam on top, do not worry.
  • Meanwhile, in a small pot we will put the soy milk, about four tablespoons of vanilla essence, lemon peel skin and put to boil.
  • Once hot, add the previously prepared mixture (the flour with starch and sugar) and let cook everything together stirring the pot at times, avoiding this sticking or burning.
  • Once well cooked, for about five minutes, remove from the heat and immediately add the margarine, stir very well so that the mixture is homogeneous.
  • Also, in 1/4 cup of water mix a teaspoon of agar agar and also add to the whole preparation. The mixture is ready.
  • Now let’s prepare the candy. Combine a cup of sugar with a pinch of water in a pot, barely covering the sugar in the pot.
  • When the candy begins to take color, add about 200 ml of hot water.
  • Cook at medium flame for about 3 minutes or until the caramel gets a clear coffee color, semi thick.
  • To finish, place in a large container or in several individual containers, a bit of the caramel and place the flan on top.
  • Allow the flan to cool to room temperature, once it is no longer hot, place it in refrigeration for at least two hours.
  • When serving, you can empty the custard, just like the traditional custard, turning it over on a plate, just like in the image, with its caramel on top.

VEGAN BISCAKE FROM CALABAZA

Ingredients:

  • 2 cups mashed pumpkin.
  • 1/2 cup of nuts (Optional)
  • 2 cups almond flour (You can replace it with wholemeal flour, oatmeal or whatever you have available)
  • 1/2 cup of panela honey (you can substitute agave, sugar or other liquid sweetener suitable for cooking)
  • 100 milliliters of vegetable oil to taste (olive, sunflower, coconut, etc.)
  • 1/2 teaspoon of cinnamon.
  • 1 teaspoon baking powder.
  • 1/2 teaspoon baking soda.
  • A pinch of salt.
  • Optional: If the cake you want more juicy than dry, you can add half a glass of vegetable milk.

Preparation:

  • We preheat the oven to 180 C, leaving it ready to bake our cake. We will leave the nuts ready to be added in a later step, so we chop them as small as we can and reserve.
  • In a bowl we place the pureed pumpkin, we incorporate the panela honey, the oil and the cinnamon. Mix using the blender until you have a uniform mixture.
  • In a separate bowl, we mix flour, yeast, salt and baking soda; This mixture is incorporated into the main mix little by little without losing the uniformity of it.
  • Finally, add the chopped walnuts and mix with a spatula or wooden spoon, we greased a mold for sponge cake and incorporated the mixture.
  • We bake 45 minutes approximately, of course the exact time will depend on each oven. After this time let the cake rest about 10 minutes before unmolding and Ready!!

  • 1/2 cup of raisins (you can use dates also)
  • 3 spoons of cocoa powder without sugar.

PREPARATION:

  • Cover the raisins with water and let them soak overnight.
  • The next day put them in the blender and add 1 to 3 spoons of cocoa powder.
  • I recommend you start with 1 tablespoon and go tasting the flavor you like more.

VEGAN CHOCOLATE PIZZA

Hello!! Friends, today I bring you a delicious recipe, a vegan chocolate pizza, to give us a taste without remorse. I hope you like this recipe, share and comment on the recipe. Enjoy your meal!

PIZZA-VEGANA-DE-CHOCOLATE

INGREDIENTS:

FOR THE MASS

  • 3 cups of oatmeal or ground oats.
  • 1 teaspoon of yeast (it is not baking powder)
  • 1 cup of water at room temperature.

FOR THE FILLING

  • 3/4 cup of dates (you can use raisins, prunes or dehydrated figs)
  • 1 cdita vanilla.
  • 2 tablespoons of cocoa powder without sugar.
  • Fruits of your choice – I used strawberries, raspberries and blackberries.
  • Nuts or dried fruit of your choice (chopped) – I used hazelnuts.

PREPARATION:

  • Mix the ingredients of the dough to a sticky consistency.
  • Cover the dough with plastic and let it stand for 1 hour.
  • While cutting the dates into small pieces and remove the bones.
  • Put them in a deep dish and cover them with hot water and a vanilla teaspoon.
  • With a fork, crush them to form a puree.
  • Add cocoa powder – start with a tablespoon and try it to adjust the flavors.
  • Add more cocoa if you want and mix well.
  • On a tray with wax paper for baking put the dough and with your wet hands make the shape of pizza.
  • I decorated the shore with blackberries and sprinkled sugar on the shore.
  • Put the dough in the oven at 180ºC for 10 minutes.
  • Remove the base of the oven and cover it with the chocolate, then the fruit and finally sprinkle the hazelnuts.
  • Put the pizza in the oven for another 10 minutes
    ready !!

VEGAN COCONUT POLVORONES

Hello!! Friends today I bring you some Vegan Coconut Polvorones delicious and very easy to make, with only 3 ingredients. They are healthy and delicious, try to do it and tell me how it was with the recipe 🙂 Good Appetite !!

POLVORONES-VEGANOS-DE-COCO

Ingredients:

  • 1 cup coconut flour.
  • 1/4 cup plus 2 tablespoons of honey of panela (you can use another sweetener such as agave or maple)
  • 1 cdita vanilla.

Preparation:

  • Pass the flour through a colander.
  • Add the piloncillo and vanilla and incorporate very well.
  • You must have a slightly moist dough that forms lumps.
  • With a spoon take a little dough and with your hands squeeze it very well until gradually forming a small ball.
  • Put the ball in the palm of your hand and with your fingers flatten it a bit until forming a cookie.
  • Continue with the rest of the dough.
  • Bake at 180ºC (356ºF) for 15 to 20 minutes or until golden brown.
  • Let them cool and ready!!

FRUIT BARS

I share an easy recipe to make, Strawberry Bars or Strawberry Cake, you have two ways to eat this delicious dessert. I hope they do and they tell me that other recipes would like to see 🙂 Good Appetite !! 🙂

POSTRES-VEGANOS-FÁCILES

Ingredients:

  • 1 cup ground oats.
  • 3/4 cup of coconut flour.
  • 1/2 cup of sugar (you can adjust the amount to your liking)
  • 1/2 cup vegetable milk (I used almond)
  • 1 cdita vanilla.
  • 1 and 1/2 cup of strawberries (can be frozen or fresh)
  • 1 and 1/2 cditas. of corn starch.

Preparation:

  • Mix well the oatmeal with coconut flour, sugar, milk and vanilla to form a mass not so firm and crumbs
  • In a baking pan (I used one of silicone that greased a bit with coconut oil) put half of the dough and press it well to form a base
  • On top of the base put the strawberries with the corn starch, all well incorporated
  • On top of the strawberries put the other half of the dough in the form of crumbs and press a bit to make it firm
  • Bake at 180ºC for about 35 – 45 minutes or until the strawberries are well cooked and the top dough is golden brown
  • Let it cool very well, unmold and cut the bars the size you prefer or you can leave it like a strawberry cupcake

HEALTHY SNICKERS

      Hello!!! Friends today I bring you some Healthy Snickers super delicious, nutritious and easy to make, since they liked my Energy Bars very much in the previous entry, today I wanted to bring you another option as DELICIOUS. 🙂

Ingredients:

  • 15-20 dates or raisins.
  • 100 g of oatmeal.
  • 50g of homemade peanut butter (or the one you have on hand).
  • 30g roasted peanuts without salt, in pieces.
  • 2-3 tbsp of water until a sticky consistency is obtained.
  • 30g of dark chocolate 80% cocoa without sugar.

Preparation:

  • Place the mass of oats and dates in a rectangular container, (the container is the one that will help them to give the shape of a bar) can be square. Ideally, do not have the edges rounded, the same that you use to bring food to work.
  • Moisten your hand, crush the mixture in the container to have a uniform size over the entire surface.
  • Place a thin layer of peanut butter on top.
  • Pour the chocolate over the peanuts and let stand for a couple of minutes.
  • Cut with a knife the shapes of the bars (also wet, so that it does not stick)
  • Take 10 minutes to the fridge and Ready!
